crbn_chk_sal Caribbean Chicken Salad - Aloha, everyone! Allow us to take you to the Caribbean with this one-of-a-kind, chicken salad! We used leftover, low fat, grilled chicken, to eliminate fat, then sun ripened, fresh, succulent fruit, and tasty long grain rice. Combined it all with Low Cal mayo, this is as hearty as it is healthy!

Main Ingredient: Chicken, Fruit, Rice
Difficulty Level: 1

Ingredients to make Caribbean Chicken Salad

3 oz/90 g cooked, long grain rice
1 oz/30 g pineapple in natural juice, drained, chopped
Half medium banana, sliced
15 oz/45 g black grapes, halved
2 ts Lemon juice.
1/4 oz/7 g sultanas
2 ts Desiccated coconut
1 tb Low fat natural yogurt
2 ts Low Cal mayonnaise
pnch Chili powder (optional)
2 oz/60 g cooked chicken, chopped
Salt and pepper.
Lemon slices and fresh Sprigs of parsley to garnish

Directions to make Caribbean Chicken Salad

Step 1:Mix together the rice, pineapple, banana, grapes and lemon juice.
Step 2:In a small bowl combine the sultanas, coconut yogurt, mayonnaise and chili powder. Add the chicken and rice mixture stirring well to coat. Season with salt and pepper.
Step 3:Serve garnished with lemon slices and parsley sprigs.
